I like to change things up with chicken or beef and this recipe is one of our favorites so I always make extra. :-) This is a dish that is loaded with flavor, easy to make and is great with Thrive's Zesty Guacamole and Chef Todd's Cilantro Lime Rice. For breakfast we add some scrambled eggs on the side and it's SO good. Every now and then I'll make my own tortillas but either way, this recipe is a keeper! https://youtu.be/tDcKPcIQVjg

Ingredients

  • 1 pkg Flour Tortillas (we buy a package of 10)
  • 1 C THRIVE Shredded Monterey Jack Cheese, Rehydrated
  • 1 C THRIVE Shredded Cheddar Cheese, Rehydrated
  • Zesty Beef Filling
  • 1 1/2 C THRIVE Small Diced Beef
  • 1 C THRIVE Sweet Corn
  • 1/2 C THRIVE Instant Black Beans
  • 1/2 C THRIVE Diced Tomatoes
  • 1 Tbsp THRIVE Chopped Onions - Add more to taste if you'd like - we're not an onion family :-)
  • 1 Tbsp THRIVE Green Chili Peppers - Again, add more for a bigger punch
  • 3 Clv Garlic, Raw, Chopped
  • 1 Tbsp THRIVE Espagnole (Savory Beef Gravy)
  • 1 tsp Cumin
  • 1/2 tsp Ground Coriander
  • 1/2 tsp THRIVE Summer Limeade (Seasonal)
  • 1/4 tsp THRIVE Chef's Choice
  • 1/2 Tbsp Oregano
  • 1/2 Tbsp Cilantro
  • 1/4 tsp Iodized Salt

Directions

  1. Add ingredients for zesty beef filling and 2 1/2 cups of water to a medium saucepan and bring to a boil.
  2. Reduce heat, cover and simmer for 10 - 12 minutes or until liquid is reduced and thickened and beans are soft.
  3. Melt a couple pats of butter in a large skillet over medium heat.
  4. Add a tortilla to the pan and give it a little spin to coat the bottom with the butter.
  5. Sprinkle some cheese over entire tortilla.
  6. Add about 1/3 cup of the hot beef to one half of the tortilla and fold over.
  7. Flip quesadilla after 2 or 3 minutes or when cheese is melted and tortilla is toasted. Repeat on the other side.
  8. Remove from pan, cut into triangles and serve with sour cream, guacamole and salsa.
