Veggie Gnocchi

Ingredients
- 1/4 C Thrive Life Carrot Dices
- 1/4 C Thrive Life Chopped Onions
- 1/2 C Thrive Life Celery
- 2 C Thrive Life Potato Dices
- a pinch of salt and pepper
- a pinch of garlic powder
- 1/4 - 1/2 C water
- 1 egg
- all-purpose flour
Directions
- Blend carrots, onions, celery, potato dices, salt, pepper, and garlic powder in a blender until they are a fine powder. This is your base.
- Take your base powder mix and add about 1/4 to 1/2 cup water to refresh powder to make a mashed potato consistency.
- Add 1 egg and all-purpose flour to the mix until it comes together like play dough and then roll into snakes.
- Chop into bite-size pieces and then roll onto a fork to make a mark.
- Boil the gnocchi you just made and add them to soup or tomato or cream sauce. This makes a nice pasta dish made from veggies.
- Once they are boiled, you can also pan fry them and mix in some beef chunks and top with parmesan and cheese and butter for a different dish.
- *Alternative Recipe 1: Veggie Soup. Add the base mix to hot water and 1 tsp of chicken bouillon for a quick veggie soup.
- *Alternative Recipe 2: Veggie Flatbread. Add the base mix to all-purpose flour, water, and salt. Roll it out into a flat bread and pan fry it to go with curry or soup.
