Thai Coconut Shrimp Soup

Ingredients
- 2 cups Thrive shrimp
- ½ cup Thrive sliced onions
- 1 Tbsp. Thrive garlic
- 2-13.5oz cans Coconut milk
- 5 whole Red dried Thai chilies
- ½ cup Fish Sauce
- 2 Tbsp. Ginger minced
- ½ cup Thai basil—Thinly sliced, chiffonade
- 3 Tbsp. Lime juice—fresh
- 5 lime leaves
- 1 Tbsp. Light olive oil
- ½ tsp. Thrive chefs choice seasoning
- 2 cups Water
Directions
- In a large sauce pot, sweat the ginger, Thai chilies with the light olive oil. Add water and all the Thrive ingredients and bring to a simmer for a few minutes.
- Add in the remaining ingredients except half the basil and simmer for 2–3 minutes.
- Finish soup with remainder basil and taste to adjust if needed.
