Ingredients

  • 2 cups Thrive shrimp
  • ½ cup Thrive sliced onions
  • 1 Tbsp. Thrive garlic
  • 2-13.5oz cans Coconut milk
  • 5 whole Red dried Thai chilies
  • ½ cup Fish Sauce
  • 2 Tbsp. Ginger minced
  • ½ cup Thai basil—Thinly sliced, chiffonade
  • 3 Tbsp. Lime juice—fresh
  • 5 lime leaves
  • 1 Tbsp. Light olive oil
  • ½ tsp. Thrive chefs choice seasoning
  • 2 cups Water

Directions

  1. In a large sauce pot, sweat the ginger, Thai chilies with the light olive oil. Add water and all the Thrive ingredients and bring to a simmer for a few minutes.
  2. Add in the remaining ingredients except half the basil and simmer for 2–3 minutes.
  3. Finish soup with remainder basil and taste to adjust if needed.
  4. Enjoy
