Summer Lime Bars

Deliciously tart lime bars using the versatile THRIVE Summer Limeade!

Ingredients
- 1/2 C THRIVE Butter Powder plus 2 Tbsp Water
- 1/2 C Butter, unsalted, softened
- 1/2 C Cane Sugar
- 2 C White Flour (All Purpose Unbleached Flour)
- For the Lime Layer
- 2 Eggs
- 2 Tbsp Whole Egg Powder plus 1/4 cup water
- 1 1/2 C Cane Sugar
- 1/4 C White Flour (All Purpose, Unbleached Flour)
- 2 Tbsp THRIVE Summer Limeade (Seasonal) plus 2 Tbsp Water
- 1/4 C Powdered Sugar for dusting
Directions
- For the Crust:
- Preheat oven to 350 degrees.
- In a medium bowl, blend together softened butter, THRIVE Powdered Butter Powder plus water, 2 cups flour, and 1/2 cup sugar. Press into the bottom of a greased 9x13-inch pan. Bake for 15 to 20 minutes in the preheated oven, or until firm and golden.
- For the Lime Layer:
- In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs, THRIVE Whole Egg Powder plus water, and THRIVE Summer Limeade plus water. (I recommend using the whisk attachment of a stand mixer on high speed to fully blend the egg powder). Pour over the baked crust.
- Bake for an additional 15 minutes in the preheated oven. The bars will firm up as they cool. Once cooled, sprinkled with THRIVE Powdered Sugar.
