Spinach Basil Pesto

Pesto is a healthy versatile sauce that can be made in minutes using Thrive. Be creative, substitute Kale, broccoli, or your favorite vegetable for the spinach. Use this sauce to make Chicken Pesto (recipe also found here in Thrive Recipes) by Tammy Hogan

Ingredients
- 1/2 c. Almonds, Pine Nuts, or Pecans
- 1 1/4 c. THRIVE Chopped Spinach - Freeze Dried
- 1/2 c THRIVE Shredded Parmesan Cheese - Freeze Dried refreshed
- 2 clv. Garlic, Raw
- 3/4 tsp Iodized Salt
- 1/2 tsp. Black Pepper
- 1/4 tsp. THRIVE Classic Lemonade (Seasonal)
- 1 c. Water
- 1/2 c Olive Oil
- 1/2 c. Basil
Directions
- Toast 1/2 cup of your choice of nuts in a dry skillet on the stove over med-high heat for 3-5 minutes. Stir to keep from burning.
- Put all ingredients, including toasted nuts, in a blender or food processor.
- Blend or process thoroughly, scraping down the sides if needed, until nearly smooth.
- Store in the refrigerator or freeze.
