Southern Jambalaya

This is a family recipe that I 'Thrive-a-lized' to make some of the prep work easier and faster. Takes all the chopping out of this recipe - it's awesome!

Ingredients
- 8 oz. smoked sausage
- 1 lb. lean ham chunks
- 1 teaspoon cajun seasoning
- 1/4 cup oil (olive, avocado, vegetable, etc.)
- 3/4 cup THRIVE Chopped Onion
- 1/4 cup THRIVE Bell Pepper, chopped
- 1/4 cup THRIVE Celery, chopped
- 1 teaspoon THRIVE Chicken Bouillon
- 2 cups water
- 1/4 cup butter
- Salt to taste
- 1/4 teaspoon black pepper, ground
- 1/4 teaspoon cayenne pepper, ground
- 1 cup uncooked rice
- 1 14oz can black-eyed pease
- 1/4 cup green onions, chopped
Directions
- Brown sausage and pork in oil, using a deep fry pan. Season with cajun seasoning.
- Add onion, bell pepper and celery and caramelize for a few extra minutes.
- Add bouillon, salt, pepper and cayenne. Stir to season.
- Add water to deglaze and bring to a boil.
- Add rice and peas, stirring to blend. Cover and simmer at low heat for 20 minutes or until rice is tender.
- Add sliced onion last five minutes or on top.
