Ingredients

  • 8 oz. smoked sausage
  • 1 lb. lean ham chunks
  • 1 teaspoon cajun seasoning
  • 1/4 cup oil (olive, avocado, vegetable, etc.)
  • 3/4 cup THRIVE Chopped Onion
  • 1/4 cup THRIVE Bell Pepper, chopped
  • 1/4 cup THRIVE Celery, chopped
  • 1 teaspoon THRIVE Chicken Bouillon
  • 2 cups water
  • 1/4 cup butter
  • Salt to taste
  • 1/4 teaspoon black pepper, ground
  • 1/4 teaspoon cayenne pepper, ground
  • 1 cup uncooked rice
  • 1 14oz can black-eyed pease
  • 1/4 cup green onions, chopped

Directions

  1. Brown sausage and pork in oil, using a deep fry pan. Season with cajun seasoning.
  2. Add onion, bell pepper and celery and caramelize for a few extra minutes.
  3. Add bouillon, salt, pepper and cayenne. Stir to season.
  4. Add water to deglaze and bring to a boil.
  5. Add rice and peas, stirring to blend. Cover and simmer at low heat for 20 minutes or until rice is tender.
  6. Add sliced onion last five minutes or on top.
