Parmesan Crusted Chicken and Brown Butter Noodles

Ingredients

  • 1 pkg Skinless Chicken Breast (4)
  • 1 C THRIVE Shredded Parmesan Cheese
  • 1 C Panko Bread Crumbs
  • 1 C Italian Salad Dressing
  • 1 pkg Spaghetti
  • 1 1/2 C Butter

Directions

  1. Thaw chicken breasts, If they are thick slice them in half horizontally to create thin pieces.
  2. Put italian dressing into a bowl
  3. take 1/2 cup parmesan cheese and blend in a blender to create small crumbs. Add to a bowl with the bread crumbs
  4. Dip chicken into dressing and then into bread crumb mixture. fry in olive oil on medium heat. try to only turn a few times to keep crumbs in place. Cook until chicken is no longer pink, and is tender
  5. Cook noodles per package instructions, drain water.
  6. Take the butter and melt in a sauce pan. Keep cooking the butter on medium high heat until it starts to turn brown...but watch and stir, butter can burn quickly. It will start to smell different.
  7. When it is brown, add to noodles, and then add other 1/2 cup of parmesan cheese. You can reconstitute the cheese ahead of time if you like, or allow the noodles to steam a bit before eating and that will cause the cheese to reconstitute.
  8. Serve your chicken on top of noodles in slices. Add extra seasoning to noodles if you prefer, some ideas would be parsley, italian seasoning, chef's choice blend, the butter is meant to flavor the noodles!
