by Monica Hilderbrand on January 23, 2015 This sweet cornbread has a fluffy, cake-like texture. It is terrific with chili or bean soup, but a dollop of cinnamon honey butter will convince you it is dessert!

Ingredients

  • 1/2 C Butter, unsalted (melted)
  • 2/3 C Cane Sugar
  • 1 C Whole Buttermilk
  • 1/4 C Water
  • 1 C Cornmeal
  • 1 C White Flour (All Purpose Unbleached Flour)
  • 2 Tbsp Whole Egg Powder dry
  • 1/2 tsp Baking Soda
  • 1/2 tsp Iodized Salt

Directions

  1. Preheat oven to 375 degrees F. Grease an 8x8 square baking pan.
  2. Combine melted butter, sugar, buttermilk, and water in large mixing bowl. Stir to dissolve sugar.
  3. Add all remaining ingredients and mix well. Pour into greased pan.
  4. Bake in preheated oven for 25-35 minutes, or until top begins to turn golden brown and toothpick inserted into center comes out clean.
