This is a healthy and light salad that is perfect for summer and to highlight any of the thrive freeze dried fruits. I love it with the grapes!

Ingredients

  • 1 head Romaine lettuce
  • 2 cups Fresh Spinach
  • 2 lemons
  • 1/3 cup Sunflower seeds of your choice (I used raw)
  • 1/3 cup Feta cheese (did you know Trader Joes has an amazing plant based feta)
  • 1/2 cup Thrive freeze dried fruit (Grapes are my favorite)
  • 1/4 tsp. Thrive Chefs Choice

Directions

  1. 1. Chop lettuce and add to bowl with spinach
  2. 2. Squeeze lemon juice over mixture
  3. 3. Add feta, grapes, and sunflower seeds and toss with hands (an youtube cook I follow said salad should never be toss with a fork!)
  4. 4. Plate and devour!
