Giardiniera Pickled Vegetables

An Italian style pickled relish that is perfect for Chicago-style hot beef sandwiches, hamburgers, hot dogs, omelets, and pasta. This is super quick and easy to make since all the Thrive Veggies are already washed and chopped! By: Andrea Anderson

Ingredients
- 1/4 c. THRIVE Onion Slices - Freeze Dried
- 1/4 c. THRIVE Celery - Freeze Dried
- 1/4 c. THRIVE Carrot Dices
- 1/4 c. Mixed Bell Peppers
- 1/4 c. THRIVE Cauliflower- Freeze Dried broken in to smaller pieces if desired
- 3 cloves Sliced Garlic
- 1/2 tsp. Peppercorn
- 1 1/4 c. Apple Cider Vinegar
- 1/4 c. Pepperoncini Pepper Slices
Directions
- Heat Apple Cider Vinegar over medium heat until simmering.
- Combine onion, celery, carrots, bell pepper, cauliflower, garlic cloves, and peppercorn seasoning in a small, heat safe bowl with a lid.

- Allow to hydrate and marinate in the refrigerator for at least an hour, but ideally 8-12 hours.
- Add sliced pepperoncini and top your favorite foods! Store covered in the refrigerator for up to a week.
