Dutch Oven "Fall off the Wagon" Rice and Beans

Western beans and rice, Dutch oven style!

Ingredients
- 1 C Bacon, cut thick and diced
- 2 Tbsp Garlic
- 1 C Instant Pinto Beans
- 1/2 C THRIVE Sausage Crumbles
- 5 C Water
- 1 C THRIVE Sweet Corn
- 1/2 C THRIVE Red Bell Peppers
- 1/2 C THRIVE Green Bell Peppers
- 1/4 C THRIVE Green Chili Peppers
- 1/4 C THRIVE Chopped Onions
- 1 C Barbecue Sauce
- 1 1/2 tsp Chili Powder
- 1 tsp Cumin
- 2 tsp THRIVE Chefs Choice
- 1/2 tsp Peppercorn
- 1 1/2 Tbsp Cilantro
- 3 C THRIVE Instant White Rice
Directions
- In a 12-inch Dutch oven, brown the bacon and drain half the grease.
- Add garlic, beans, and sausage and sweat together.
- Deglaze with water and bring to a simmer.
- Add all remaining ingredients except rice and bring to a simmer for 2–3 minutes.
- Add rice, stir well, and cover with lid.
- Put 16 coals on lid and 7 coals under oven; bake for 15–20 minutes. Fluff rice before serving.
