Dutch Oven "Fall off the Wagon" Rice and Beans

Ingredients

  • 1 C Bacon, cut thick and diced
  • 2 Tbsp Garlic
  • 1 C Instant Pinto Beans
  • 1/2 C THRIVE Sausage Crumbles
  • 5 C Water
  • 1 C THRIVE Sweet Corn
  • 1/2 C THRIVE Red Bell Peppers
  • 1/2 C THRIVE Green Bell Peppers
  • 1/4 C THRIVE Green Chili Peppers
  • 1/4 C THRIVE Chopped Onions
  • 1 C Barbecue Sauce
  • 1 1/2 tsp Chili Powder
  • 1 tsp Cumin
  • 2 tsp THRIVE Chefs Choice
  • 1/2 tsp Peppercorn
  • 1 1/2 Tbsp Cilantro
  • 3 C THRIVE Instant White Rice

Directions

  1. In a 12-inch Dutch oven, brown the bacon and drain half the grease.
  2. Add garlic, beans, and sausage and sweat together.
  3. Deglaze with water and bring to a simmer.
  4. Add all remaining ingredients except rice and bring to a simmer for 2–3 minutes.
  5. Add rice, stir well, and cover with lid.
  6. Put 16 coals on lid and 7 coals under oven; bake for 15–20 minutes. Fluff rice before serving.
