Depression Carrot Cake

Quick and delicious, this gluten free cake is also egg and dairy free! To make gluten-free use Thrive Life gluten free flour. If you don't need gluten free, just use regular. Either way, it's an easy dessert to prepare that everyone will love.

Ingredients
- 1 1/2 c. THRIVE Gluten Free Flour plus 3 T
- 1 c. Granulated Sugar
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1/2 tsp. Salt, Tabl
- 1/2 tsp. Ground Cinnamon
- 1/4 tsp. Ground Cloves
- 1/4 tsp. Ground Allspice
- 1/4 tsp. Ground Nutmeg
- 3/4 c. Carrots, Washed, Peeled, Finely Shredded
- 1/2 c. Chopped Walnuts (optional)
- 1/2 c. Golden Raisins (optional)
- 1 1/2 tsp. Apple Cider Vinegar
- 1 tsp. Pure Vanilla Extract
- 5 tbsp. Avocado Oil (or any vegetable oil)
- 1 c. Water
Directions
- Preheat oven to 350 degrees F.
- Grease an 8" round baking pan with non-stick cooking spray.
- In a large mixing bowl, mix the first 9 ingredients and blend well.
- Add the vinegar, vanilla and oil. Then pour the water over the top.
- Blend with hand mixer for one minute.
- Add carrots, walnuts and raisins and blend well. Pour in the greased baking dish.
- Bake on middle rack of oven for 35-45 minutes until a toothpick comes out clean.
- Allow to cool and top with your favorite cream cheese frosting, powdered sugar or coconut milk whipped topping.
