Creamy Coconut Curry

If you like coconut and comfort food this quick and easy meal is just right for you! Adapted from a traditional curry, includes a dash of Italian spice. We ladle over rice or naan if you prefer and topped with peas. You will be craving it for years to come

Ingredients
- 1 tbsp. coconut oil
- 1 c. THRIVE Chopped Onions - Freeze Dried
- 1 tsp. curry powder
- 1 tsp. Ground Turmeric
- 1 tsp. sea salt
- 1/4 tsp. chili flakes
- 4 tsp. THRIVE Garlic
- 1 tbsp. fresh ginger shredded
- 1 tsp. THRIVE Italian seasoning
- 2 c. THRIVE Potato Chunks dehydrated
- 1 1/2 c. THRIVE Tomato Dices - Freeze Dried
- 1 tbsp. maple syrup
- 2 can Canned Coconut Milk
- 1 c. THRIVE Green Peas - Freeze Dried
- 2 c. THRIVE Instant White Rice
Directions
- Prepare rice according to directions, simmering for about 8 minutes. Let sit covered for appx. 5 min, fluff with fork and set aside.
- In a medium sized stock pot on medium high heat, add coconut oil and white onion. ( no need to refresh) Cook for about 3-5 minutes. Add your curry powder, turmeric, sea salt, chili flakes, italian seasoning, garlic, and fresh ginger and cook on med / low for about another 5 minutes. TIP: I like to premeasure dry seasonings into a dish and just pour at once.
- Next add your 2 cups of potato chunks, tomato dices, coconut milk, 1 tbsp. of real maple syrup. Bring this to a boil and then let simmer until potatoes are tender. (appx. 15-20 min) Add your cup of FD peas.
- Lastly, spoon rice into serving bowls and ladle curry overtop! You will probably have to double or triple this recipe or more once your family tastes it! If there are leftovers they are just as amazing!
