Coconut Macaroon Pancakes

It’s important to give your coconut mix time to rehydrate properly in boiling water before making pancakes AND it’s important not to have very hot water added to the pancake mix. I tested this, just for you. by Francesca Hutchinson

Ingredients
- 1/2 c. Macaroon Cookie Mix
- 1/2 c. Boiling Water
- 2 c. 10 Grain Pancake Mix
- 1 c. Water
Directions
- Blend macaroon mix with boiling water and let sit 5 minutes.
- Preheat your skillet or griddle until water droplets dance from the heat.
- Add pancake mix and the rest of the water to bowl and gently mix until just blended.
- Do not over mix your batter as your pancakes will end up flat and tough.
- Grease your pan with baking spray, oil or butter as you wish.
- Use approximately 1/4 cup batter to make 12 five inch pancakes.
- Chef's note: You can be very creative with your topping, Chopped pecans, coconut and a touch of brown sugar then covered with maple syrup sounds wonderful to me!
