Chocolate Buttermilk Cake

Ingredients
- 1 c. THRIVE butter
- 1/4 c. cocoa
- 1 c. water
- 2 c. Cane Sugar
- 2 c. White Flour (All Purpose Unbleached Flour)
- 1/2 tsp. Iodized Salt
- 1/2 c. buttermilk
- 1 tsp. Baking Soda
- 2 tbsp. Whole Egg Powder + 1/4 c. water
- 1 tsp. vanilla extract
- Frosting
- 1/2 c. butter
- 1/4 c. cocoa
- 1/4 c. buttermilk
- 1 lb. Powdered Sugar
- 1 tsp. vanilla extract
Directions
- Preheat oven to 350F.
- In a saucepan bring butter, cocoa and water to boil; cool.
- Meanwhile, in a large mixing bowl combine sugar, flour, and salt. Pour cocoa mixture over dry ingredients. Mix well.
- Combine buttermilk and baking soda. Add to cocoa mixture. Add eggs and vanilla and mix until smooth, scraping bowl constantly.
- Pour into greased and floured pan. Bake for 20 minutes.
- Frosting - Melt butter, cocoa, and buttermilk. Mix in vanilla and sugar. Cool and then spread onto cake.
