by Sarah Horwich on January 25, 2015 Just in time for Super Bowl! This recipe is soooo yummy during cooler months and works great to warm you up. Very simple to prepare - all in one pot - no chopping, no dicing, no dirtied kitchen. Can easily be doubled or tripled. **Note - This is made in the crock pot, so it's a fix it and forget it recipe. Could easily be made on the stove top is you need dinner in a hurry.** **Also, please note that the taco soup in the photo was made with fresh diced tomatoes as this is what I had on hand that needed used. That is the beauty of THRIVE!! It's very versatile - you can swap fresh for freeze dried and freeze dried for fresh depending on what is in your fridge, pantry or home store.

Ingredients

  • 1 C THRIVE Instant Black Beans - dry
  • 1/2 C THRIVE Sweet Corn - dry
  • 2 Tbsp THRIVE Green Chili Peppers - dry
  • 1 C THRIVE Chopped Chicken - dry
  • 1/4 C THRIVE Chopped Onions - dry
  • 1 C THRIVE Tomato Dices - dry
  • 1/3 C THRIVE Tomato Powder - dry
  • 2 C Water, divided
  • 1 tsp THRIVE Chicken Bouillon
  • 16 oz Light Beer (can substitute equal amount of prepared Chicken Bouillon)
  • 1/2 pkg Dry Taco Seasoning Mix

Directions

  1. Whisk tomato powder into 1 cup water until smooth and incorporated. Add to crock pot.
  2. Whisk chicken bouillon into 1 cup water until smooth and incorporated. Add to crock pot.
  3. Combine all other ingredients in crock pot and stir to combine.
  4. Cover. Cook on high for 6 hours, stirring occasionally.
  5. To serve, garnish with crushed tortillas, hot sauce, cheese, diced green onions, sour cream, etc. Enjoy!!
