Chef Todd's Dutch Oven Biscuits

The Dutch oven version of Chef Todd's famous biscuits!

Ingredients
- 3/4 C Butter, Salted or THRIVE butter
- 4 C White Flour (All Purpose Unbleached Flour)
- 4 1/3 C Cake Flour
- 1 tsp Iodized Salt
- 3 1/4 Tbsp Cane Sugar
- 1/4 C Baking Powder
- 2 C Bacon, browned and crumbled
- 1 C THRIVE Shredded Cheddar Cheese
- 1/2 C THRIVE Green Chili Peppers
- 4 C Buttermilk
Directions
- In a large bowl, cut butter into dry ingredients.
- Fold in bacon (with some grease for flavor) and remaining ingredients. Mix until just moistened, careful not to over mix.
- Knead dough only 4 or 5 times and roll dough about an inch thick on a floured surface.
- Cut biscuits with a ring mold and place touching each other in a greased Dutch oven. Brush tops with butter.
- Cook with 30 coals on lid (24 around edges and 6 in the center) and 9 underneath (6 around perimeter and 3 in the center).
