Cajun Chicken Quinoa (Jar Meal)

Healthy veggies and chicken and some Cajun flavoring to spice up your quinoa! Make it into a soup by increasing the water to desired consistency at the end of the cooking time.

Ingredients
- 1 1/3 c. THRIVE Seasoned Chicken Slices - FD
- 1/2 c. Organic Quinoa
- 2/3 c. THRIVE Tomato Dices - FD
- 1/3 c. THRIVE Zucchini - FD
- 1/3 c. THRIVE Onion Slices - FD
- 1/3 c. THRIVE Red Bell Peppers - FD
- 1/3 c. THRIVE Green Peas - FD
- 2 tbsp. Tomato Powder
- 2 tsp. THRIVE Chicken Bouillon
- 1 tbsp. Cajun spice blend
- 1/2 tsp. Iodized Salt
- 1/3 c. THRIVE Shredded Parmesan Cheese - FD
Directions
- In a clean, dry quart jar layer the ingredients in the order listed, except the cheese, tamping down when necessary to accommodate each layer. Place cheese in a small plastic bag and get as much air out as possible. Put this bag in the top of the jar. Place lid on and store to use within a month or so. For longer storage, seal with a vacuum sealer.
- To Cook the Jar Meal
- Pour 4 cups of water into a large saucepan or a Dutch Oven. Remove cheese bag and set aside. Dump contents of jar into water and stir well.
- Heat to boiling, then reduce heat and simmer for 15 minutes or until quinoa is fully cooked.
- Remove from heat. Add cheese and stir to combine. Cover and let sit for 5 minutes or until cheese is fully refreshed.
