Ingredients
- 5 c Boiling water
- 3 c THRIVE Potato Chunks
- 1 tsp Iodized Salt
- 1/4 c Mixed Bell Peppers
- 1/2 c. THRIVE Red Bell Peppers - Freeze Dried
- 1/4 c THRIVE Chopped Onions - Freeze Dried
- 1/2 c. THRIVE Sausage Crumbles - Freeze Dried
- 2 tsp. THRIVE Chefs Choice
- 1/4 c. Olive oil
- 1/4 c. THRIVE Green Onions - Freeze Dried
- 1 tsp. Chives
- 1 tsp. Parsley
- 1 tsp. Basil
Directions
- Boil the water, place potatoes in a bowl, and pour water over potatoes. Add salt and stir. Allow to sit for 10 minutes.
- In a medium bowl combine peppers, onions, and sausage. Add enough warm water to barely cover vegetables and allow to sit (do not drain).
- Preheat a large skillet until very hot.
- Drain water from potatoes, drizzle 2/3 of the olive oil into hot pan, and add potatoes to pan all at once.
- Press potatoes against the pan to brown, then stir occasionally, drizzling remaining oil around the side of the pan.
- Once browned, add vegetables and sausage mixture, seasoning, green onions, and herbs and stir well. Sauté on high heat until warm and browned.
