Berry Baked Quinoa

Loaded with fruit, this baked quinoa is easy to throw together and bake. Mix it up with different fruits/berries. Approximately 3-4 cups of fruit total. Make this hot cereal a warm holiday tradition or a favorite staple.

Ingredients
- 2 c. Organic Quinoa
- 1 c. THRIVE Strawberry Slices
- 1/2 c. THRIVE Blueberries
- 1/2 c. THRIVE Granny Smith Apple Slices
- 1/2 c. THRIVE Pears
- 1/2 c. THRIVE Raspberries
- 1/2 c. THRIVE Blackberries
- 1/2 c. THRIVE Scrambled Egg Mix
- 1/2 c. THRIVE Honey Crystals
- 2/3 c. THRIVE Instant Milk **for lactose free** use 3 C lactose free milk in place of: Instant milk and 3 cups of the water**
- 2 tbsp. Ground Cinnamon
- 1 tsp. Ground Allspice
- 1 tsp. Ground Nutmeg
- 4 c. Water
- 1/2 c. Favorite cereal milk (per serving) ((DO NOT COMBINE with other ingredients UNTIL SERVING))
Directions
- ***For Lactose free, replace Thrive instant milk powder and 3 (of the 4) C water with 3 Cups Lactose free milk***
- Preheat oven to 350 degrees
- Lightly grease a 9x11 baking dish.
- In a mixing bowl, combine all the dry and freeze-dried ingredients.
- You may want to break up the freeze-dried ingredients into smaller pieces.
- Add the water and stir well.
- Pour mixture into baking dish and place in the oven.
- Bake 1 hour. Until the top is firm and golden brown.
- Serve while hot and pour your favorite cereal milk on top. Enjoy!
- Refrigerate any left overs.
- (Warm up left overs or serve cold, both ways taste great!)
- (If using fresh fruit, decrease the amount of water.) To make this into a Jar Meal, change the servings to 3 and put the dry powders and spices in first then the quinoa and top with the fruit.
