Laura's (Keto) Zuppa Toscana Soup

Laura is on a Keto diet for her tasting party, so I redid her favorite soup so she would not miss out. Everyone ate her soup and she never had any leftovers. Substituted cauliflower for the potatoes. Omitted the carrots.

  1. Add ingredients to pot: sausage, onion, celery, cauliflower, pepper flakes, salt and pepper and seasoning
  2. Simmer for 20-30 minutes, Add extra broth or water as needed
  3. When cauliflower is cooked and soft , add broccoli and cream
  4. When soup is hot stir in spinach. Taste and add more seasoning if needed
  5. Transfer to a crock pot and set on warm to hold until dinner if needed
  6. Sprinkle bacon and Parmesan cheese over top and serve
