"Gimme Thrive" Gnocchi Soup

A hearty, thick chowder-like soup that is sure to please--substitute cooked pasta for the gnocchi if you prefer.

  1. In a Dutch oven-sized pot, combine the onion and celery and heat over medium-high heat for a couple of minutes, stirring often. Pour in the 1 cup of water and stir well.
  2. Add the butter, garlic, and flour. Stir well to incorporate.
  3. Pour in the half and half and stir well. Bring to a boil, stirring constantly. Reduce heat and simmer for a few minutes until thickened a bit.
  4. Add the bouillon, 3 cups water, chicken, seasonings, and carrots. Simmer for 10 minutes.
  5. Add the spinach and cooked gnocchi and simmer until warmed through.
