  1. In a mixer bowl, combine the 1 cup + 1 tsp. hot water with the yeast. Whisk well. Add dough mix. With dough blade, mix until dough forms. Then knead with mixer for 5 minutes.
  2. Place dough in a greased bowl, turning to coat. Cover with plastic wrap and let sit to double (about 1 hour).
  3. Preheat oven to 425 degrees.
  4. Punch down dough and roll out in a rectangle onto floured board. Carefully transfer to a greased baking sheet.
  5. Along each length of the dough, cut in about 1/3 of the way with knife or pizza cutter to make strips down each side (same number of strips on each side).
  6. Combine tomato sauce, basil, and water to make the pizza sauce. Spoon about a third of this down the center (un-cut area) of the dough.
  7. Top the sauce area with 1 1/2 cups of the cheese. Top cheese with 24 pieces of pepperoni.
  8. Starting at one end, "braid" strips over the middle, alternating sides until you reach the other end. Pinch ends to seal.
  9. Top the entire braid with the remaining cheese and pepperoni.
  10. Bake for 20 minutes. Allow to cool for 5-10 minutes before slicing and serving with the remaining sauce as a dip.
