Beef Enchiladas

  1. Combine all filling ingredients and let sit for 10 minutes.
  2. Saute filling mixture in a hot skillet. Cook until tender and set aside.
  3. Combine all sauce ingredients except espagnole, cheese, and sour cream in a saucepan and bring to a simmer. Once simmering, add espagnole and simmer for 2 minutes.
  4. Pour sauce into a blender and blend until smooth. Pour back into pan. Fold in sour cream and cheese and stir until incorporated.
  5. Mix 1/4 cup of the sauce into the filling mixture.
  6. Assemble enchiladas by putting 1/4 cup of filling mixture in each tortilla, sprinkling 1 tablespoon of cheese on top, and rolling up tight.
  7. Put rolled tortillas in pan and pour remaining sauce over them. Sprinkle remaining cheese on top.
  8. Bake at 350F for 15-20 minutes.
