Mango Salsa Burrito Wrap

You can make this for a lettuce wrap or on a tortilla. To make this a jar meal: Place the first 8 ingredients in a pint jar in order. These will be added to the water first. Place the last 7 ingredients in a second pint jar in order. The Cheddar Cheese, Sour cream and Guacamole do not get cooked with the ingredients-- they are separate optional toppings so do not put them in a jar.

  1. Heat 2 1/2 cups of water to boil.
  2. Add the first 8 ingredients (The first jar contents) to boiling water.
  3. Stir, lower heat to medium and cover.
  4. Simmer for 5 minutes.
  5. Add the next 7 ingredients (The second jar contents).
  6. Stir and continue to simmer for 5-10 more minutes
  7. Spoon mixture into lettuce leaves or tortillas and wrap.
  8. Sprinkle the tops with cheddar cheese.
  9. Add sour cream and guacamole as desired on top.
